Ingredients
- 1/2 cup pumpkin purée
- 1/2 cup almond butter
- 1/3 cup honey
- 2 eggs
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1/2 teaspoon baking soda
Mom's baked goods
A simple mix-and-bake recipe made with pumpkin purée, almond butter, honey, and warm spice.
Preheat the oven to 350°F.
Grease an 8-by-8-inch baking pan with butter or coconut oil. You can also use nonstick baking spray.
Add all ingredients to a large mixing bowl and stir until the batter is smooth and evenly combined.
Pour the batter into the prepared pan.
Bake for 20 to 25 minutes.
After 20 minutes, insert a toothpick or butter knife into the center. If wet batter clings to it, bake for another 5 minutes and check again.
Let the bars cool completely in the pan before cutting them into squares or rectangles.
