Chocolate Peanut Butter Banana Bites

A favorite flavor combination with a soft banana-peanut butter center and a crisp dark-chocolate shell.

Ingredients

  • 1 large ripe banana (about 1/2 cup mashed)
  • 6 tablespoons smooth natural peanut butter
  • 1/2 cup finely ground almond flour
  • 5 to 6 tablespoons coconut flour
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 1/2 cup dairy-free dark chocolate chips
  • 2 teaspoons coconut oil
  • Flaky salt or chopped peanuts, optional

Directions

    Line a plate that fits in your freezer with parchment paper.

    Mash the banana until smooth. Stir in the peanut butter, maple syrup, and vanilla.

    Mix in the almond flour and 5 tablespoons coconut flour. The mixture should be soft but firm enough to roll. Add the final tablespoon of coconut flour if it is too wet; add a little more mashed banana if it becomes crumbly.

    Lightly oil your hands and roll the mixture into 16 small balls. Set them on the prepared plate and freeze briefly while you melt the chocolate.

    Microwave the chocolate chips and coconut oil in 30-second intervals, stirring after each, until smooth.

    Use two forks to dip each bite in chocolate. Return it to the parchment and add flaky salt or chopped peanuts while the coating is still wet.

    Freeze for 10 to 12 minutes, until the chocolate sets. Store the bites in an airtight container in the refrigerator for up to one week.
